Weight Watchers Mini Cherry Cheesecakes

8 graham crackers crushed into crumbs

2 Tbs reduced calorie margarine, melted

8 oz fat free cream cheese

2 Tbs. fresh lemon juice

2 large egg whites

1 tsp vanilla extract

1/3 cup sugar

1 can Oregon Red Tart Cherries in water, drained reserve juice

1 Tbs cornstarch

1/3 cup Truvia (or splenda to taste)


Place 12 cupcake liners in a cupcake pan. Combine graham cracker crumbs and margarine, mix well. Spoon 1 Tbs crumb mixture into bottom of each liner and press down gently. Refrigerate while making filling.

Beat cream cheese until fluffy and add lemon juice, egg whites, vanilla and sugar. beat until smooth. Spoon cream cheese mixture evenly into crumb cups. Bake at 375 degrees for 15 minutes, cool. While baking, whisk together the cornstarch and Truvia in a small saucepan. Drain the cherries and add the juice to the cornstarch mixture. Whisk over medium heat until mixture starts to boil and is thickened and clear. Fold in the cherries into the slurry and cool completely. Top each cheese cake with 1 tablespoon filling.
