Raspberry Walnut Cheese Spread

You must try this recipe for Raspberry Walnut Cheese Spread. It’s easy, beautiful and impressive.

Spread:

8z cream cheese, softened
1½ cups grated sharp white cheddar
2 TBS Sherry
¾ TSP curry powder
½ cup green onion finely chopped
½ cup finely chopped, toasted walnuts

Blend together (reserving ¼ cup onions) for garnish and shape into a round flat disk 1½ inches thick and 8 inches in diameter. Sprinkle walnuts all over spread and lightly press.

Topping:

1 can Oregon Fruit Raspberries, drained reserving ½ cup syrup
1TBS plus 1 TSP Hot Mustard
1 TBS cornstarch

Heat raspberry syrup, cornstarch and mustard until thickened, stirring often.  Gently stir in raspberries and cool. Spread topping on cheese spread in a 6-inch circle in the center.  Garnish with remaining onions. Serve with Crackers.
