Ozark Apple Cherry Pudding

2 cups sugar

1 1/4 cup oil

2 eggs

3 cups flour

1 tsp salt

1 tsp baking soda

1 tsp cinnamon

1 can Oregon Red Tart Cherries, drained

1 large apple, diced

1/2 cup chopped walnuts


Mix together sugar, oil and eggs. In a separate bowl combine dry ingredients, then add to the sugar mixture. Stir in apples and nuts, carefully fold in cherries.

Spread in a greased floured 13 x 9 inch pan. bake at 350 degrees for 45 minutes or bake in individual ramekins. Makes about 8.  shorten baking time to 35 minutes.

*The only person I ever knew with a connection to the Ozarks was my friend Deron’s mom.  She was a fantastic baker, cook, canner and an all around talented woman in the home arts. She was also an Oregon Fruit fan.  She passed away this past summer and when I saw this recipe I knew I just had to pay homage to a wonderful person, mom and grandma.

  1. your recipe for the pudding sounds delightful. I live in a small town in Ga and we don’t have bakeries around here with the really good desserts. If you can’t bake your stuck.
