Morning Glory Blueberry Squares

Ingredients

  • Canned mashed sweet potatoes 1 pound: 3 cups (¼ No. 10 can)
  • Light brown sugar, packed: 2 cups (14 ounces)
  • Fresh eggs, large: 6 each
  • Orange juice, single strength: 2/3 cup (5 ounces)
  • Vegetable oil: 2/3 cup (5 ounces)
  • Whole wheat flour: 1 quart (1 pound 2 ounces)
  • All-purpose flour: 2 cups (9 ounces)
  • Baking powder: 1 tablespoon 2 teaspoons
  • Cinnamon, ground: 1 tablespoon
  • Salt: 1-½ teaspoons
  • Baking soda: ½ teaspoon
  • Blueberries, canned well drained: 3 15oz cans

Instructions

  1. Combine sweet potatoes, brown sugar, eggs, orange juice and oil until smooth
  2. Stir together whole wheat flour, all-purpose flour, baking powder, cinnamon, salt and baking soda
  3. Add to sweet potato mixture and stir just until combined
  4. Spread half of batter into greased 12x20x2-½-inch steamtable pan
  5. Sprinkle with half the frozen blueberries
  6. Spread remaining batter over berries
  7. Sprinkle remaining berries over top and press into batter
  8. Bake until lightly browned:
  • Conventional oven: 350° F for 35-40 minutes
