Grilled Chicken Salad with Blackberry Vinaigrette Serves 4

1/2 can Oregon Fruit Blackberries, drained (reserve the juice for another use)

Juice of one lemon

2 tsp honey

1 shallot, minced

1 tsp Dijon mustard

1 TBS balsamic vinegar

2 TBS olive oil



10oz mixed greens

1 mango, peeled and sliced

2 chicken breasts, grilled and sliced

1 large avocado, sliced

1/3 cup shelled pistachios

½ can Oregon Fruit Blackberries

Puree ½ the blackberries with the lemon juice in a food processor. Strain into a jar, discard seeds. Add the rest of the ingredients and shake well.

Divide the salad ingredients evenly amongst 4 plates.  Sprinkle with Kosher Salt and freshly ground black pepper. Drizzle with vinaigrette.
