Cherry Hand Pies makes 8

Posted November 17th, 2012 in Desserts, Recipe

1 tube Pillsbury Grands Buttermilk Biscuits

1 can Oregon Fruit Red Tart Pie Cherries in Water

3 Tbs cornstarch

½ cup sugar

¼ tsp almond extract (opt)

2-3 drops red food coloring (opt)

1 Tbs milk

1 Tbs sugar

Preheat oven to 400 degrees.

Drain the cherries and reserve 1/3 cup juice

Whisk the cornstarch and sugar in a small saucepan. Add the juice and whisk over medium heat until the slurry is thick and clear.  Add optional ingredients and gently fold in cherries.   On a lightly floured board, roll the biscuits out to about 1/8 thick.  Add about heaping teaspoons of filling and fold over the dough, sealing the edges with a fork.  Repeat with all 8 biscuits.  Place on a cookie sheet lined with parchment paper or silpat. Brush with milk and sprinkle with sugar.

Bake about 10 minutes or until golden brown.

  1. Will you please send a recipe for the filling of a cherry pie using Oregon Fruit Products, namely, Red Tart Cherries, canned in water. Thank you.

I have started shopping in Bellingham and I was so surprised to find, canned pitted tart cherries, in water. The cheeries are excellent for baking. My daughter destroyed the label when recycling the can. The recipe went into the garbage.

Thank you—from Margaret in Surrey BC
