Last weekend I had a great visit from my parents. They are in their 80s but still active and can hop on a plane from Southern California just because they want to. Although they still have the energy to embrace an outing, they operate on the leisurely pace of the retired. That was good for me. I, on the other hand do not. I am usually on a dead run at all times. This particular weekend I had purchased tickets for a matinee of a Frank Sinatra revue. We all slept in and I made a nice brunch.
My sister, Penny, and her daughter Leah are big fans of Hungry Girl. Lots of folks are Hungry Girl fans – Oprah, Rachael Ray, etc. So I thought I better try out some recipes and get with the program. Who better to experiment on than your parents? They are going to love you anyway, right? Also, my mother has tried every diet invented in the last 50 years so she is a bit of an expert. Hungry Girl is all about taking delicious recipes and spinning them towards lower fat and higher fiber. Of course, me being the Queen and all, I had to put my own spin on the recipe. So I decided to try out her “Crazy-Good Carrot Cake Pancakes” but instead of the cream cheese glaze, I topped them with blueberries (and threw a few inside just for fun). The results were fantastic, just ask my dad. The color was glorious, the texture and taste were satisfying and we didn’t need to eat again until after the matinee. There are a lot of ingredients in this recipe so if you don’t feel like going to all that trouble you can mix up some box pancake mix, follow the directions on the package, throw in some of the blueberries and then make the topping as directed. The blueberry topping is the star so you won’t be disappointed.
