Blueberry Meal-in-a-Muffin

Makes 12-15 muffins


  • 2 c whole wheat white flour (I found this at Trader Joe’s) If you can’t find whole wheat white flour, use 1 cup of whole wheat and 1 cup of unbleached white flour
  • 1 1/4 cups oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup unsweetened applesauce
  • 2/3 cup low-fat buttermilk
  • 1/2 cup firmly packed brown sugar
  • 1/4c canola oil
  • 1 large egg + 1 egg white, lightly beaten
  • 1 can Oregon Fruit Blueberries, well drained (save the juice for another use)
  • ¼ cup chopped pecans if desired


  1. Preheat oven to 350 degrees.
  2. Line a 12 cup muffin tin with paper cases or spray with nonstick cooking spray. (I didn’t use muffins papers, I just sprayed the muffin pan with cooking spray.)
  3. In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon. In a medium bowl combine applesauce, buttermilk, sugar, oil and egg. Make a well in dry ingredients and add applesauce mixture. Stir until just moist. Fold in all but ¼ cup of blueberries. Fill muffin cups 2/3 full. Drop the reserved berries on top and press lightly with the back of a spoon. Bake for 16-18 minutes.
