Easter/Passover Brunch

The last of the big baking holidays are upon us. People still gather with family and friends to celebrate the religious holidays of Easter and Passover. If you are not a religious family it’s still a great time to get together to celebrate. It’s one of the only times that families gather for brunch and I have to admit, I LOVE breakfast and brunch. I was watching the Barefoot Contessa on the Food Network recently and she made some fantastic looking maple oatmeal scones. I thought adding blackberries would be nice. I’m making a Crustless Spinach Pie Brunch Bake accompanied by some homemade scones, good French roast coffee and fresh strawberries! I’m inviting my family and some friends over to share the morning and hopefully we will be able to eat outside on the patio.

For those of you in the Midwest and East I am sorry to gloat. As I write this, I am en route to Minneapolis to visit a customer and my flight was canceled due to a major snowstorm in Denver. I was made instantly aware of how lucky I am to live in California in the spring. Of course no one will be envying the Sacramento summer in a few months so I am grateful for today. Another great treat available to me in the spring, are the fresh strawberries farms scattered around the Sacramento valley. There is a good one not too far from where I live so those will definitely be on the menu. According to the Produce for Better Health website we are definitely being encouraged to eat more fruit and vegetables in ALL forms: fresh, canned, frozen, dried, even 100% juice.

Although the scones would not be considered health food with all the butter they contain, I am at least making an effort with the whole wheat flour, oats and blackberries. The blackberries are high in fiber and a powerful antioxidant. My brunch bake is loaded with spinach and of course there are those fantastic strawberries packed with vitamin C and ellagic acid, an important antioxidant linked to cancer prevention in animal studies (I learned about this on The Biggest Loser-why do I find the need to admit to all the TV I watch, Hmmm? I will have to explore this.)
