With Mother’s Day around the corner, I thought I’d share the brunch menu I made for Easter because it can be easily adapted for Mother’s Day too. My family loves a “brunch bake” or “breakfast casserole” that can be prepared the night before, and then popped in the oven to bake itself while the kids search for eggs or some attend church. My sister usually makes this item and has tried many types of “brunch bakes” over the years. The most infamous brunch menu was the time she doubled the spinach hoping to give us all that extra dose of antioxidants and iron to start our summer exercise regime. The meal was less than well received, especially by my daughter Allison. Suffice it to say, she is not a fan of spinach or mushrooms and this dish was chock full of both. Allison isn’t generally impolite, and can pick out and avoid things she doesn’t like without making a scene, but it was impossible to pick the spinach out. That brunch bake became part of our family lore…we still talk about it!
This year I scoured the internet, recipe sites, food blogs etc. looking for delicious recipes to share with you. I have adapted two that I think are fantastic. One is savory and one is sweet so you can choose your family’s pleasure or make them both!
The savory one is Leek, Bacon, Mushroom Brunch Bake. It’s full of farmer’s market goodness-even fresh eggs from my friend Deron’s chickens! It’s fairly healthy, filling, flavorful and satisfying. The other is a Blueberry Orange Stuffed French Toast. It is really delicious and easy to assemble. It’s also beautiful and not terrible for you. Most of the ingredients can probably be found in your kitchen, as long as you have some Oregon Blueberries in the pantry at all times.
