In many parts of the country, kids are back to school this week. Moms everwhere are either crying or celebrating depending on what kind of summer they had with said kids. My own daughter Kaitlin is a teacher so she has returned to the classroom and now lives four hours away. You can imagine which camp I am in right now. My neighbor, Joy, has just put her little daughter Cait in pre- K. So although Cait and her brothers are great kids and lots of fun, I am sure Joy can use the two extra hours she now has to do extra chores around the house. When kids come home from school, no matter how long they have been there, they seem to be ravenous. Since I am a fan of “the Food Revolution” and Michelle Obama’s “Let’s Move” campaign to wipe out childhood obesity, I decided to do a healthy and filling afterschool snack for you today. A few Thursdays ago our three-step recipe was pretty decadent and adult oriented with fancy shortbread and mascarpone cheese. Today its a lot more simple:
1. Take any flavor rice cake, (I like brown rice varieties either plain or honey).
2. Spread rice cake with all natural peanut butter.
3. Top with Oregon Fruit canned blueberries removed from syrup with a slotted spoon.
